Food is on my mind. During our first day of summer vacation, it is 64 and cloudy. Jay and I were just working in the yard, and I picked some peas. We really aren't pea eaters, but I found this delicious recipe for pea stuffed raviolli on a great new website. Well, new to me anyway. I wanted to share it.

And while I was sharing, I told a few of you I would send you the recipe for Jill's crazy girl salad. I also thought you others may like it. I know I always welcome a new recipe.!
here it is:
Crazy Girl Salad- named by ME!!!
8 oz spinach
1 head iceberg lettuce
1 cup shredded swiss
1 c cashews
1/2 lb bacon cooked and crumbled
2-3 apples cut
Dressing:
1 cup oil
3/4 c sugar
1/3 c vinegar
1 t salr
1 t dry mustard
1/2 T chopped onion
1/2 T poppy seeds.
as you know I alwasy change recipes to be easier for me, and based on what I have on hand. Here is what I have done numerous times, and it was still a hit.
I used whatever lettuce, spinahc I had on hand- lately that being fresh from the garden
I used shredded parmessan- it reminds me of swiss, or at least close enough. But not the powdery stuff!!!!
I used bacon crumbles from the fridge.
I make a smaller batch of salad, but a full batch of dressing. I have this really cute bee hive dressing bottle from Dollar Tree. The dressing keeps, then all I have to do is re-assemble the ingredients. Hope you enjoy!
